Pancakes for the Lactose Intolerant

Pancake Day is an absolute nightmare for those that are lactose intolerant, this is something we live with in my house on a day to day basis but on Shrove Tuesday it can be heart breaking. This little recipe is an alternative to standard milk based pancakes which still basically works like pancakes. It’s no more difficult to make than normal pancake batter and produces a decent result considering there are no milk proteins involved in its manufacture.

You can top these off with the usual lemon and sugar combo, but I recommend Swedish Glace Soya Ice-cream (it’s the best ice-cream in the world bar none), or some nice fruits but you’ll be surprised how much you can get your mits on!

  • 100g plain flour
  • 2 eggs
  • 300ml Sweetened Almond Milk
  • Sunflower oil or vegetable for frying
  • Topping of whatever you choose.

To Make the batter.

  1. Sieve the flour into a bowl and create a small well in the centre.
  2. Crack the eggs into the flour well you just created. (When I say crack the eggs I mean empty the contents of the egg into the well and not just fire the eggs at the bowl in the hope you merely crack the shell in your attempt to drop them.)
  3. Add 1/3rd of the Almond Milk and slowly start to whisk the ingredients together.
  4. As the mixture begins to clump add another 1/3 of the Almond Milk and continue to whisk. The mixture should slowly start to thin out but will still be quite thick.
  5. Add the final third of the milk and keep whisking until there are no lumps left and all that remains is a smooth creamy batter.
  6. Leave the batter to rest for 1hr in the fridge.

To Cook

  1. Get standard frying pan and get it nice and hot over a medium-high heat.
  2. Add a decent quantity of the oil until it starts to sizzle.
  3. Add 1 ladle full of the batter mix and work it around the base of the pan. Keep moving the pan to stop the pancake from sticking.
  4. Once the top of the pancake has little to no batter on it then flip the pancake. (with a flourish if you so choose.)
  5. Give it another 30 seconds or so and serve.
  6. Add any toppings you want to add.

Hopefully this will your pancake day be a bit more bearable this time round.
