Baked Paella Style Risotto

Paella can be an absolute nightmare to knock together, but this Baked Paella Style Risotto is easy! Paella is not a particularly wet rice dish so if you don’t have the right pan it can be quite sticky like a risotto. Risotto’s are slimy and horrible but they are a bit easier to make. This is a quality nice all in one compromise that you can chuck into the oven for 3/4 of an hour and be freaking tasty when it’s done.

This dish will feed plenty and the ingredients cost next to bugger all. It’s a great thing if you want a nice tasting dish to split between a few people.

Important Ingredients.
300g Risotto or Paella Rice (about 2/3 of a 500g bag if you’re not that fussy about measurements.)
1 and 3/4 litres of warm chicken stock.
5 chicken thighs
Some chorizo, I whack a whole ring in.
Pinch Saffron
Salt
Pepper
Smoked Paprika
Cayenne Pepper
1 red onion
4 cloves garlic.

Optional Ingredients.
Frozen Peas
Prawns or Mussels

  • Set your oven at 200 degrees for a fan oven.
  • De-bone and skins the chicken thighs and cut the meat into decent sized chunks.
  • Cut the Chorizo into decent sized pieces.
  • Chop the onion finely and crush he 4 garlic cloves.
  • Into a glass or porcelain roasting dish add the Onion, Garlic, Chicken Thighs and Chorizo.
  • Pour the rice around the meat then pour in the stock.
  • Add a pinch of the saffron, 2 tsps of the smoked paprika, 1 tsp of the Cayenne Pepper and plenty of salt and pepper and just stir the contents of the dish together.
  • Whack it into the oven for 30 minutes.
  • After 30 minutes take it out of the oven and just give the dish a little stir. If you are using any of the optional peas add them now and stir them in. If you are using the prawns or mussels rest them on the top.
  • There’s a simple rule for optional ingredients. Vegetables/Mushrooms mix them in, everything else rest on top.
  • Put the whole lot back into the oven for another 15 minutes, when it’s done take the whole lot out and serve the whole dish on the table, side or whatever.

You can literally go mental with this dish. What ever meat or fish is on offer I your local supermarket, Turkey works well, Scallops are a nice add, particularly with pork. All in all you need about 3/4 of a kilo of meat but don’t worry about it if there’s a bit more. Don’t worry of its slightly fatty or anything it adds to the flavour. You could try Pork with black pudding and Scallops as optional ingredients.  Go Mental, Experiment with the dish, just remember, meat in chunks in first.
