Cheats Chicken Coconut Curry

A The man times, we recognize that all modern men need to be able to cook, and its important to be able to whip up some half decent gastronomy at short notice.  You never know when you need to impress the missus, prepare a romantic meal or worse impress the in-laws!  We pride ourselves on giving men a recipe tool kit to cover almost every situation.  This is a simple curry recipe of my own creation that comes together really quickly.  There’s a bit of prep work on the meat, that takes a few minutes and needs to be left for a while but the results are supremely tasty and the end result is surprisingly healthy.

Chicken coating.
500g diced chicken
Juice of 1 lime
Juice of 1/2 a lemon
3 heaped teaspoons natural yoghurt.
2 tablespoons mild Chili powder.
Handful fresh coriander,
1 1/2 cubic inches of fresh ginger
4 cloves garlic.

Crush and finely chop the ginger and garlic and put the chicken and all the coating ingredients in a bowl and mix the shit out of it.  Get your hands in there and move it all around making sure all the bits of chicken are covered and leave it for 6 hours or so. If you can do this don’t worry too much.

The Sauce.
1 can mild coconut milk.
3 tsps Mild Chilli Powder
3 tsps turmeric
3 tsps cumin
1 shallot

Heat a pan with olive oil at the bottom.

Finely chop the shallot and gently fry until soft.

Add the chicken to the pan and all the mixture and fry till cooked but not necessarily brown.

Chuck in the coconut milk and then whack the turmeric and cumin in. and let it simmer till it thickens!  Its so simple, if you can get your prep work in early on the chicken then you’re on to a winner.  It looks impressive and it tastes great.  You can customize this bad boy too, change the the mild Chilli Powder for something hotter, add slices of whole Chilli.  Add some red pepper and slices of tomato to bulk out the curry, you can really play around with the contents.

The Rice.

1 Cup Rice. Any style will do, bit of Basmati or long grain, doesn’t really matter.
1 Pinch Saffron
2 Bay Leaves
8 Cardamon Pods

Really simple this add the rice and all the ingredients into a pan, add enough water to cover the rice, then add the same amount again.

Boil it all up until the rice is cooked, if you find the rice is undercooked and you’re running low on water don’t be afraid to add a bit more.

Just before serving fish out the Cardamon Pods and the Bay leaves and you’ll be left with some impressive looking colorful rice!
