Edgy’s Perfect Chili Quarter Pounder

What with the weather being so nice and it being BBQ season I’ve decided to write my recipe for the perfect homemade chili Quarter Pounder.

This is my own recipe that’s developed quite the following amongst my friends and family, a must around BBQ season they always go down well and offer a spicy alternative the normal supermarket fare.  These were lovingly tested and improved over a period of years until we the perfect chili to burger ratio was established.

Serves 4:

What you will need:

½ Red Onion Very finely chopped – No more than 3 or 4 mm square.
500g Minced Beef Avoid Lean Mince wherever possible, yes it’s better for you but I makes for a lot less tasty burger
5 Chillies of medium strength Apache or Hungarian Hot wax for example.  Colour is irrelevant but if you can get red ones they do make for a more a visually more appealing bite!De-seed these!
1 Egg To bind
1 Large Tablespoon Flour To help the Egg!
25g Fresh Coriander Chopped Finely.

 

  1. Finely chop the Onion and Coriander and add to a large Mixing Bowl.
  2. De-Seed the chilies and chop into small slices.
  3. Add in the 500g of Minced Beef.
  4. Beat the Egg and add the Flour beaten egg into the bowl.
  5. Season heavily with Salt and Pepper
  6. Now Get Your Hands in!  Mix the ingredients together until all the ingredients are evenly distributed throughout the pile of meat that now rests in the bowl.  The mixture should be sticky at this point.
  7. Once you are satisfied that there is an even distribution of ingredients throughout the mixture divide the mix evenly into 4 pieces.
  8. Form each individual piece into patties; use a burger press if you have one for a good burger shape if, if not ensure that your burgers are of an equal thickness (around an inch thick) and are relatively uniform in shape to ensure an even cooking time.  Press firmly on each burger to avoid disintegration during the cooking process.
  9. BBQ or grill the patties until cooked through thoroughly.

Serving Suggestion:

Serve in a soft flour roll with lettuce, cheese and sour cream.

Also works well with salsa or a host of burger relishes.  Why not try fried onions or a BBQ flat mushroom also.

For extra spice use Mexicana cheese and a hot salsa!

Go extreme and swap in Bird Eye Chillies!
